There is something innately comforting and satisfying about a piping hot bowl of noodles in rich, savoury soup. The folks at Paradise Group know this, and so they’ve opened Le Shrimp Ramen in the basement of Paragon.

No, the name isn’t a frou-frou French affectation. The “Le” indicates Paradise Group’s Chinese name, Le Tian.

Le Shrimp Ramen is the first concept in Singapore to offer la mian served in shrimp broth topped with big prawns.

Hey, wait - doesn't that sound like the hae mee from your local hawker centre?

Not quite. This broth is cooked Japanese ramen-style, with baked big prawns hand-ground and then simmered for more than eight hours with Chinese spices and premium conpoy.

Each bowl’s broth is prepared individually: First, scallion oil is scalded in a wok; then, cabbage is flung in to char before a large ladle of shrimp stock is poured in to boil. This lends the dish a signature smoky flavour that elevates the sweetness and umami of the prawn.

The specialty dish, Le Signature Trio Shrimp Ramen (S$19.90), is served with fresh big prawns, prawn dumplings and handmade ebiko prawn paste balls.

The idea was conceived by Paradise Group’s CEO Eldwin Chua during his travels in Japan, where he came across a ramen stall specialising in shrimp-based broth. Combining that inspiration with his chefs’ expertise in Chinese cuisine, he wanted to create a dish that comes out of Singapore, for Singaporeans, he said.

The prawn – they use deep sea prawns for the best flavour and texture – is definitely the star here, but for those who don’t eat shrimp, there’s also the option of pork broth.

And if la mian doesn’t float your boat, you can opt for a bowl of thick vermicelli or hor fun.

Side dishes on offer include Long Jing tea lava egg, chilled silken tofu with century egg and braised beancurd in tonkotsu broth.

From Dec 7 to 9, Le Shrimp Ramen will be running an opening promotion offering one-for-one for all noodle dishes.
