MasterChef Singapore Zander Ng whips up heritage dishes at The Clifford Pier

The pop-up menu, which includes Buak Keluak Risotto and Har Cheong Calamari, is only available this month at The Fullerton Bay Hotel Singapore.

MasterChef Singapore winner Zander Ng is currently serving up reworked Singaporean favourites alongside Western classics at The Clifford Pier at The Fullerton Bay Hotel until Jan 26.

The eight dishes on Ng’s menu is an homage to the multicultural dishes the Australian-Singaporean grew up enjoying.

These include Scallop Carpaccio, inspired by the Thai dish Tom Kha Gai; the Har Cheong Calamari, a take on prawn paste chicken; and the Miso Glazed Eggplant, a Japanese spin on the humble vegetable.

For mains, there’s Buak Keluak Risotto, a local twist to Italian risotto with homemade rempah and buak keluak, garnished with shavings of house-cured egg yolk. The cider-brined Kurobuta Pork Chop combines premium pork chop with plum sauce, sunchoke purée and deep-fried holy basil.

To incorporate local flavours in the Beef Tagliata, Ng opted for Chinkiang black vinegar over traditional balsamic vinegar.

Finally, there’s the Kumquat Polenta Cake, paired with ginger marmalade and ice cream. Meanwhile, Chinese five-spice adds a savoury touch and unique depth of flavour to the Sticky Date Pudding.

A la carte dishes start from S$21. The three-course set lunch is priced at S$59 while the three-course and four-course dinners are at S$69 and S$79, respectively.

Ng, a 31-year-old IT manager, emerged victorious in the first season of MasterChef Singapore, which concluded last October.
